Butter is tops in U.S.

As consumers shift to healthier options, butter consumption goes up

With more consumer focus on natural foods, butter consumption hit a 40-year high in 2012 in the U.S.

According to the American Butter Institute, per-capita butter consumption rose to 5.6 pounds in 2012, up from a low of 4.1 pounds in 1997.

Butter's popularity has grown as consumers have become more educated about trans fats and processed foods.

Last fall, the U.S. The Food and Drug Administration's new rules all but banned fats that are responsible for clogging arteries.
