When it comes to cheese, consumers want clean labels,and the story behind their cheese, as well as bolder flavours.
These are the two key trends driving the cheese category, according to new figures from Chicago firm Information Resources Inc.
For example, IRI's figures showed that the natural cheese category showed dollar sales up 2.4% this year to $11.7 billion.
Some of the features of cheese that consumers are attracted to have been new products emphasizingo organic, raw, grass-fed milk cheeses, and unique flavour combinations and convenient packaging portions.
According to the International Dairy-Deli-Bakery Association bold, robust and spicy flavours are what's driving sales.
