With "gluten free" and "paleo diet" now both common terms amongst most consumers, a new version of these diets is gaining ground.
According to a U.S. Mintel survey, "grain free" may be the next consumer diet trend to watch.
Refined processed grains have been getting a bad rap for the past few years and, in turn, more grain-free baking ingredients and recipes are popping up as CPGs look for alternatives to wheat-filled products.
According to a recent article at Bakeryandsnacks.com, Mintel research manager Chris Brockman believes "Almond and coconut flours are becoming particularly trendy and are being launched in increasing numbers as baking ingredients."
He added that there is significant potential for other fruit, nut and vegetable-based flours.
