NotMayo is a plant-based mayonnaise that its producer, the Kraft Heinz Not Company, says delivers a smooth and creamy texture similar to that of the traditional egg-based spread. NotMayo is made using Guiseppe, an AI platform that matches ingredients to mimic the animal-based product by sifting through data to find ingredients and processing combinations.
