Chocolate is undergoing a renaissance. Dark chocolate is viewed as a healthy indulgence while certain ingredients (bacon, anyone?) are being paired with chocolate to form extreme flavours.

The Institute of Food Technologists recently examined the consumer and industry trends that are driving chocolate innovation.

As expected, health now plays an important role in chocolate. Chocolate with added protein is viewed as one opportunity to grow the category. Another is chocolate with no added sugar or sweetened with the natural sweetener stevia. Read the article here.
