Dimpflmeier says new product is the best thing since sliced bread

Smart Carb bread contains high protein, low carbohydrates and zero sugar

Dirk Ziegler doesn't shy away from Dimpflmeier Bakery's claim that its new Carb Smart product is the holy grail of modern bread.

"It's the honest to God truth," said Ziegler, plant manager of the Toronto company, North America's fourth-largest bakery. "This product is the greatest thing since sliced bread."

Launched last week at several test stores in the Greater Toronto Area, Smart Carb is billed as the world's first commercially-produced bread to contain high protein, low carbohydrates and zero sugar.

“This is the bread the world has been waiting for,” Dimplfmeier general manager Torsten Galle said in a press release to announce the launch.

He said both athletes and health- and weight-conscious foodies will love the 34 grams of protein, 8 grams of fiber and two grams of carbs that Smart Carb delivers in every 100-gram serving.

“We finally have a product that addresses this very large group of consumers," said Galle.  "Finally, they can eat bread again.”

According to Ziegler, he and Galle first hit on the idea of trying to develop a low-carb, high-protein bread in late 2013.

"For years we'd been hearing people complain about the lack of a bread like that on the market," said Ziegler.  "We listened and decided to act."

He said it took months of mixing and tweaking ingredients and doing test batches and tastings involving all 100 employees at Dimplfmeier's GMO-free facility in Toronto's west-end Etobicoke district to reach that eureka moment when Smart Carb was born.

"It was unanimous," recalled Ziegler.  "Everyone in the plant gave it a thumbs up for taste and texture."

He said the bakery's efforts are now focused on ramping up production and getting the word out about its new high-protein bread to both grocers and consumers.

"We want people to understand the health benefits of this new product," said Ziegler.  "Once they do, watch out."
